As we move toward the summer months, days are getting busier. School activities are winding down, but not before end-of-year banquets, playoffs, or other end-of-season events. There’s excitement with the arrival of warmer weather, but schedules are filling up, leaving less time for day-to-day tasks like meal planning.
For many of our Members, planning healthy meals for the whole family is an important priority. Sourcing varied, healthy meals that everyone enjoys can be time-consuming, but there are excellent choices available. We gathered a few tasty options the whole family can enjoy.
Trader Joe’s Sun-Dried Tomato Focaccia Sandwich
There’s something about the combination of pesto mayo, sun-dried tomato focaccia, turkey, red onion, tomato, and greens that is a perfect blend of sweet and savory. This sandwich can be enjoyed by family members of all ages, plus it takes only minutes to make!
Pizza Bites
It’s not uncommon to have a picky eater (or two!) at the table. That’s why we love pizza bites. They’re tasty and full of wholesome ingredients, like basil, olives and Greek yogurt. Kids love that they taste like pizza. Parents love the healthy ingredients and the reduced cooking time of less than 30 minutes.
Taco Lasagna
Looking for a way to use up ground beef or turkey? Want something that’s easy and appeals to a wide range of tastes? Taco lasagna is a tasty, filling meal that combines comfort food and health in a seamless way. Kids love this for a “Taco Tuesday” treat and parents will also enjoy that this casserole offers a great opportunity to help picky eaters get their daily recommended veggie servings.
Alphabet Soup
Did you ever have canned alphabet soup as a child? Do you remember how fun it was to spell words on your spoon during supper? We’ve found a tasty recipe that you can make it at home that the whole family will love! The recipe allows for modifications, especially with really young children who need reduced sodium, and makes enough to serve more than one meal!
Homemade Chili Dogs
It’s nice to sit outside for lunch or supper on a warm day, and these homemade chili dogs will travel well wherever you go! Now it’s no secret that chili dogs don’t top the list for the healthiest of meal options, but making a few changes, including using a bean-free chili, can make all the difference. The prep for this meal is about 45 minutes, but yields multiple servings that can be refrigerated for future meals or events. There’s no end to the possibilities of tasty meals that you can share as a family over the warm-weather months.
